A sweet, salty, and slightly creamy summer thirst quencher for when you need a little extra hydration. Watermelon provides plenty of fluid along with some potassium, while the salt adds sodium—two important electrolytes lost through sweat. Greek yogurt adds protein and creaminess, and chia seeds add fiber, healthy fats, and a little more staying power, making this more substantial than plain watermelon.
Ingredient highlight
Watermelon! Is great in the summer because it’s super hydrating with a 92% water content. It also contains vitamin C, potassium, and magnesium and is rich in carotenoids and lycopene, which are strong antioxidants particularly important for eye and heart health.
Servings 1 – 2
Ingredients
- 2 cups watermelon cubes
- ¼ cup plain Greek yogurt
- 1 tbsp chia seeds
- 1 tbsp lime juice
- ⅛-¼ tsp kosher salt*
- *Adding salt makes this super hydrating and brings out the watermelon flavor. Use more or less depending on your preference and what type of salt you’re using. If using regular fine salt, only add a pinch.
Instructions
- Add all ingredients to a high-speed blender and blend until smooth. Let sit for at least 10 minutes to allow the chia seeds to hydrate—or refrigerate and make it ahead—then drink up!
Items you can prep ahead (optional)
- Cube 2 cups watermelon
- Make the drink
Substitutions:
- Watermelon is the best here, but you can use any seasonal fruit – berries, peaches, cherries, etc… If using another fruit, add some water (¼-½ cup) so that it blends because watermelon has a ton of water content. You can also add some honey or dates or maple syrup to sweeten it up.
- To make vegan, replace the yogurt with 1 tablespoon or nut or seed butter.
- Skip the chia seeds for a simpler drink.
Storage:
- Store leftovers in an airtight container in the fridge for up to 3 days.
Leftovers + Repurposing:
- Shake it up and drink!
