This smoothie is super refreshing on a hot summer day. I like to whip it up and store it in the fridge to sip on throughout the day if I need a pick-me-up. It’s also a great post-run or post-workout recovery drink because it’s packed with protein, healthy fats, calcium and iron-rich spinach, and fast carbs.

Servings 2 People
Prep Time 5 minutes

Ingredients

  • 1 ½-2 cups water
  • 1 heaping cup frozen mango or use pineapple
  • 1 cup frozen spinach
  • ½ banana fresh or frozen
  • ¼ cup coconut flakes
  • ¼ cup hulled hemp seeds
  • 1 tbsp lime juice
  • Pinch of salt
  • Start with 1 ½ cups of water. If you want your smoothie to be thinner or if it’s not blending easily, then add a bit more water.
  • Note: depending on how sweet your mango is, you may want to add some sweetener (like maple syrup or honey), to taste.

Instructions

  • In a high-speed blender, add all ingredients (starting with 1 ½ cups water) and blend on high until totally smooth.
  • If the smoothie isn’t blending easily, add a touch more water and blend again.

Substitutions:

  • Use 4 cups loosely packed fresh spinach in place of frozen.
  • Sub the tropical fruit with seasonal peaches!
  • Sub hemp seeds with 3 tbsp of nut or seed butter

Storage:

  • Store leftovers in an airtight container in the fridge for up to 2 days.

Leftovers + Repurposing:

  • Swirl/shake it up before sipping out of the fridge.
