Winter isn’t really the time for frigid cold smoothies, but this immune-boosting, nourishing smoothie is the exception! None of the ingredients are frozen, so it will be more room temp, which is better for digestion anyways.

It’s loaded with immune-boosting and vitamin C-rich citrus, mineral rich sweet potatoes, and digestion-supportive ginger. Perfect for if you need a morning or afternoon pick-me-up or if you’re feeling under the weather.

My taste tester told me it tasted like an orange creamsicle – I’ll let you be the judge!

Ingredient highlight

Citrus! There’s a reason why we eat a lot more citrus in the winter months – citrus fruits are loaded with immune-boosting vitamin C. They’re also high in fiber and flavonoids (anti-oxidants).

P.S. Don’t remove the pith (that spongy white stuff underneath the skin)! It contains just as much vitamin C as the flesh and is also loaded with fiber.

Ingredients

  • ½ cup mashed sweet potato (or about ½ sweet potato)
  • 1 orange, peeled
  • 2 tbsp walnuts (or any nut/seed or nut/seed butter)
  • 1 tbsp lemon juice
  • ½ inch knob ginger
  • 1 cup water
  • Maple syrup or dates (optional to increase sweetness)

Instructions

  • Add all ingredients to a high-speed blender and blend until smooth. Taste and if you want it a bit sweeter, add a dash of maple syrup or a couple of dates.

Items you can prep ahead (optional)

  • Roast the sweet potato

Substitutions

  • If you don’t have roasted sweet potato on hand, you can substitute pumpkin puree
  • Use any nut or seed you like – they add a good dose of healthy fats so we can better absorb the nutrients
  • I like to use Cara Cara oranges, but a navel orange will do!

Storage

  • Store leftover smoothie in a jar with a lid in the fridge for up to 2 days.

Leftovers + Repurposing

  • Eat straight out of the fridge!
  • Turn it into a smoothie bowl and top with granola, fruit, and nuts. You could even stir in some yogurt to make it thicker.
