These easy turkey patties are the perfect protein to prep for the week to add to lunch salads and bowls or eat as a protein-rich snack. My goal here was also to show you how you can easily stretch any ground meat by adding veggies (a great way to use up veggie scraps as well).

Ingredient Highlight

Turkey! Is a great source of iron, B vitamins, zinc, selenium, and potassium. It also contains tryptophan, which helps with serotonin production (our happy neurotransmitter). Always opt for turkey with higher % fat – turkey thighs contain higher amounts of minerals than the breast (and has more fat and flavor).

Ingredients

  • 1 tbsp olive oil
  • 1 egg
  • 8 oz ground turkey
  • 1 cup finely chopped veggies*
  • 1 tsp ground cumin*
  • ½ tsp kosher salt
  • ½ tsp garlic powder or 1 clove garlic, minced or crushed**
  • ½ tsp black pepper
  • * Use cabbage, broccoli, bell pepper, kale, mushrooms, coleslaw mix, anything! Just make sure to finely chop it.
  • ** I’m using cumin and garlic, but you could use whatever spices you like! Dried oregano, fennel, red pepper flakes, etc…would all work!

Instructions

  • Preheat oven to 450F or 425F convection. Line a baking sheet with parchment paper. Drizzle the oil all over and use a brush or your fingers to spread it all around to coat.
  • In a medium bowl, add the egg and whisk. Add turkey, veggies, cumin, salt, garlic, and pepper. Use your hands to mix to combine thoroughly.
  • Form the turkey mixture into small mounds (about 1 heaping tablespoon, you should have about 12-15) and place onto the oiled sheet. Roll them around in the oil to coat on both sides (or use a brush), then flatten them slightly with your hands. Bake for 10-12 minutes or until browned on the bottom and cooked through.

  • Finely chop 1 cup veggies
  • Make turkey patty mixture, form patties, and bake!

Substitutions:

  • These unfortunately can’t be made vegetarian.

Storage:

  • Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.

Leftovers + Repurposing:

  • Warm up leftover patties in a pan on the stove or in the microwave. 
  • Add these to salads or grain bowls for protein.
  • Enjoy them as an easy protein-rich snack.
