For our anniversary, we stayed at a cute little bed and breakfast in Maine and one of the breakfast items was crispy cheese fried eggs. So, naturally, I asked them how these eggs were made and immediately noted it to use as a future recipe. I decided to turn them into a breakfast taco, where the bottom golden cheese layer acts as the tortilla. The combo of eggs and cheese packs in 26g of protein per serving. The fillings are up to you, but I like a simple tomato, avocado, lime with a dash of hot sauce.
Ingredient highlight
Eggs! These little rays of sunshine are a great source of vitamin K and B vitamins. They’re also high in selenium, vitamin D, and choline (an important nutrient for brain health).
Try to buy pasture-raised eggs! The amount of healthy omega-3 fats found in the yolks and other nutrients depends on what those chickens were eating. A true sign of a well-fed chicken is a golden yolk. My favorite store-bought brands are Vital Farms, Happy Egg, and the 365 (Whole Foods) brand pasture-raised eggs.

Ingredients
- 2 large eggs
- Kosher salt
- Olive oil
- 2 oz grated cheddar (about ½ cup packed)
- Black pepper
Toppings:
- Chopped tomatoes, pico de gallo, or salsa
- Chopped cilantro
- Sliced avocado
- Cabbage slaw
- Feta cheese
- Lime wedge
- Hot sauce (optional)
- Protein boost! ~ Add an extra egg or top with some beans, cooked breakfast sausage, chorizo, or bacon.
- Bulk it up! ~ Serve it in a real corn or flour tortilla – once the cheesy eggs are done, place a tortilla in the skillet, put the eggs on top, and let that warm up for a minute or so.
Instructions
- To a bowl, add the eggs and a pinch of salt and whisk until smooth.
- In a small (preferably non-stick) skillet over medium-high heat, add a light drizzle of oil, swirl to coat the pan, then sprinkle the cheese all over into one layer. Top with some black pepper. Let the cheese cook/melt for 30 seconds, then pour the eggs over top in a circular motion.
- Reduce the heat to medium and let it cook for 1-2 more minutes or until the cheese is turning golden on the bottom and the eggs are almost all the way cooked through.
- Reduce the heat to low and cover with a lid until the egg is cooked through on the top, about 30-60 seconds.
- Slide the cheesy eggs onto your plate. Let it cool off until it’s cool enough for you to pick up. Top with your toppings of choice. Eat it like a taco.

Substitutions:
- To make dairy-free, you can try using a dairy-free cheese. These can’t be made vegan.
- You can use any grated cheese you want. You could even use feta cheese, crumbled into fine crumbles.
Storage:
- You could make the tacos ahead and reheat them in the skillet.
Leftovers + Repurposing:
- If you have leftovers or prepped some ahead, simply warm them up again in a dry covered skillet, then top with your desired toppings.
