Protein boost! ~ Add an extra egg or top with some beans, cooked breakfast sausage, chorizo, or bacon.
Bulk it up!~ Serve it in a real corn or flour tortilla - once the cheesy eggs are done, place a tortilla in the skillet, put the eggs on top, and let that warm up for a minute or so.

Grate 2 oz cheddar (a packed ½ cup)
Prep your toppings!
Instructions
To a bowl, add the eggs and a pinch of salt and whisk until smooth.
In a small (preferably non-stick) skillet over medium-high heat, add a light drizzle of oil, swirl to coat the pan, then sprinkle the cheese all over into one layer. Top with some black pepper. Let the cheese cook/melt for 30 seconds, then pour the eggs over top in a circular motion.
Reduce the heat to medium and let it cook for 1-2 more minutes or until the cheese is turning golden on the bottom and the eggs are almost all the way cooked through.
Reduce the heat to low and cover with a lid until the egg is cooked through on the top, about 30-60 seconds.
Slide the cheesy eggs onto your plate. Let it cool off until it’s cool enough for you to pick up. Top with your toppings of choice. Eat it like a taco.

Substitutions:
To make dairy-free, you can try using a dairy-free cheese. These can’t be made vegan.
You can use any grated cheese you want. You could even use feta cheese, crumbled into fine crumbles.
Storage:
You could make the tacos ahead and reheat them in the skillet.
Leftovers + Repurposing:
If you have leftovers or prepped some ahead, simply warm them up again in a dry covered skillet, then top with your desired toppings.
