Chocolate Cherry Peanut Butter Smoothie

This creamy chocolate smoothie was thought up after a member requested a peanut butter chocolate smoothie recipe in one of our member Q&A’s. My version sneaks in veggies and gets sweetened with cherries and a touch of maple syrup. Both the peanut butter and the frozen cauliflower give the smoothie an ultra creamy consistency that you’ll crave! It’s decadent enough to be enjoyed as dessert (topped with whipped cream) and nourishing enough to have as a post workout recovery drink or a mid-morning pick-me-up! 

Ingredient highlight

Cherries! These little stone fruits are packed with vitamin C, fiber, and potassium. The deep red cherries are rich in anthocyanins – a potent antioxidant and anti-inflammatory phenol.

Prep Time 5 minutes

Ingredients

  • 1 cup frozen riced cauliflower*
  • 1 cup water
  • 1/2 heaping cup pitted cherries (fresh or frozen)
  • 2-3 tbsp peanut butter**
  • 1/4 cup unsweetened cocoa powder
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • *You can find this in the frozen veggie section of your grocery store (I buy in bulk at Costco for smoothies). You can also use steamed and frozen zucchini (increase to a generous heaping cup)!
  • **More peanut butter will make the smoothie more creamy and peanut butter-y!
  • Note: ~ Try swapping out ½ cup of the water with brewed coffee for a mocha variation!

Instructions

  • In a high-speed blender, add the cauliflower, water, cherries, peanut butter, cocoa powder, maple syrup, vanilla, and salt. Blend on high until smooth and creamy. Taste and add more maple syrup if you want it sweeter.
  • Sip on it as is or top with cacao nibs and more cherries.

Substitutions:

  • To make nut-free use sunflower butter or tahini.
  • This could easily be made with frozen blueberries or raspberries, though since raspberries aren’t as sweet, you’ll likely need more maple syrup.

Storage:

  • Store leftovers in an airtight container in the fridge for up to 3 days.

Leftovers + Repurposing:

  • Enjoy leftovers right out of the fridge!

    This is Linda’s daughter. What an amazing morning drink! It combined two of my greatest loves, chocolate and peanut butter. I might try to substitute cherries for banana and see how that works out as well. I feel like this drink can be so flexible. Thank you Natalie for such an amazing recipe!
