Chocolate Cherry Peanut Butter Smoothie

Ingredients

  • 1 cup frozen riced cauliflower*
  • 1 cup water
  • 1/2 heaping cup pitted cherries (fresh or frozen)
  • 2-3 tbsp peanut butter**
  • 1/4 cup unsweetened cocoa powder
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • *You can find this in the frozen veggie section of your grocery store (I buy in bulk at Costco for smoothies). You can also use steamed and frozen zucchini (increase to a generous heaping cup)!
  • **More peanut butter will make the smoothie more creamy and peanut butter-y!
  • Note: ~ Try swapping out ½ cup of the water with brewed coffee for a mocha variation!

Instructions

  • In a high-speed blender, add the cauliflower, water, cherries, peanut butter, cocoa powder, maple syrup, vanilla, and salt. Blend on high until smooth and creamy. Taste and add more maple syrup if you want it sweeter.
  • Sip on it as is or top with cacao nibs and more cherries.

Notes

Substitutions:

  • To make nut-free use sunflower butter or tahini.
  • This could easily be made with frozen blueberries or raspberries, though since raspberries aren’t as sweet, you’ll likely need more maple syrup.

Storage:

  • Store leftovers in an airtight container in the fridge for up to 3 days.

  • Enjoy leftovers right out of the fridge!
