It’s that time of year when zucchini is piling up in your gardens, CSA, or on sale at the grocery store! Below are a few favorite and delicious ways to use them up if you need a little help!

Just a reminder that the simplest and purest way to enjoy summer zucchini is to rub it in some oil, salt, and pepper, and throw it on the grill until it’s deeply charred and infused with that smoky flavor. At that point, you can squeeze some lemon or vinegar over top and add it to anything (salads, bowls, tossed with feta and/or ricotta, etc…).

Make pasta!

When you cook down zucchini in a skillet, it turns sweet and jammy and makes for a delicious pasta sauce!

Bake them into savory snacks

Grate your zucchini and add them to muffins, bars, and loaves – it makes them super moist!

Stuff them with cheesy things

Cut them in half, scoop out some of the insides, and stuff them with a protein + cheese!

Chop up or grate the zucchini and add them to a quesadilla filling!

When zucchini is grilled or pan-fried at a high heat, it gets this beautiful golden char that makes them irresistible and a delicious addition to a grain salad or pasta salad.

    Thanks! I can’t wait to try a couple of these recipes! Another idea , if interested, I just grate it and freeze it to use all winter long. ( grate it, wring wring dry, freeze in muffin tins or in 1 cup dollops on parchment paper for a couple hours , then freeze and seal in baggies). I often use it in omelets in winter but friends use it in breads or other recipes.
