This easy summer juice is packed with electrolytes and is incredibly refreshing and hydrating on a hot day or after a long run. It also happens to be a great mixer/base for cocktails and pairs especially well with tequila or mezcal.

Ingredient Highlight

Watermelon! Is great in the summer because it’s super hydrating with a 92% water content. It also contains vitamin C, potassium, and magnesium and is rich in carotenoids and lycopene, which are strong antioxidants particularly important for eye and heart health.

Servings 4 cups strained
Prep Time 10 minutes

Ingredients

  • 4 heaping cups chopped watermelon (about ½ of a small watermelon)
  • 1 cup water
  • ¼ cup lime juice
  • 1-4 tbsp honey (optional)
  • Pinch of kosher salt
  • Make it a cocktail because it's 5 o’clock somewhere! Add ice cubes to a cocktail glass (option to salt your rim first!), pour in a shot of tequila or mezcal. Pour the watermelon limeade over. Cheers!

Instructions

  • Add all ingredients to a high-speed blender and blend until combined.
  • Place a strainer over a bowl with a pour spout or large liquid measuring cup and strain the juice so that it can remove the pulp and seeds. You’ll need to do this in batches, using a spoon to press and mix the pulp around so that the liquid drains through. You can save the pulp and add to smoothies or mix with water.
  • Transfer to the fridge to chill.
  • Enjoy it over ice, as a cocktail mixture, or mixed with sparkling water.

Items you can prep ahead (optional)

  • Chop 4 cups worth watermelon
  • Make the limeade and strain it.

Substitutions:

  • To make vegan, sweeten with maple syrup or skip it.

Storage:

  • Store leftovers in an airtight container in the fridge for up to 4 days.

Leftovers + Repurposing:

  • Give it a good shake before drinking since the water separates.
  • Drink it on its own over ice or turn it into a cocktail (see recipe note).
  • Mix it with sparkling water!
