Winter is citrus season and I love adding any and all citrus to smoothies when the weather is cold. It will rev up your digestion and brighten up your day! Protein-rich hemp seeds and almond butter balance out that bright citrus and make it nice and creamy.
Ingredient Highlight
Citrus! There’s a reason why we eat a lot more citrus in the winter months – citrus fruits are loaded with immune-boosting vitamin C. They’re also high in fiber and flavonoids (anti-oxidants).
P.S. Don’t remove the pith (that spongy white stuff underneath the skin)! It contains just as much vitamin C as the flesh and is also loaded with fiber.
Servings 2
Ingredients
- 1 ½ cups frozen spinach
- 1 ½ cups water
- 1 cup frozen mango or pineapple
- 1 orange, peeled*
- 1 small or ½ large lemon, peeled*
- ½ banana (fresh or frozen)
- ¼ cup hulled hemp seeds
- 2 tbsp almond butter
- 1-inch knob ginger
- Pinch of salt
- *If you’re worried about eating citrus seeds, you can just use the juice from one lemon and remove the seeds from your orange. I don’t bother!
- Note: ~ I love keeping frozen spinach on hand for smoothies. It’s actually a lot higher in nutrients than fresh store-bought spinach and you get way more bang for your buck!
Instructions
- Add all ingredients to a high-speed blender and blend until smooth.
Substitutions:
- You can substitute fresh spinach for frozen. 1 ½ cups frozen spinach is equal to around 8 oz fresh, which is like 7-8 cups (this is why I like to buy frozen for smoothies)! I would just add 3 cups fresh…
- You can sub any frozen fruit for the mango/pineapple.
- Use any nut or seed butter.
- Skip the hemp seeds and add an extra tablespoon of almond butter.
Storage:
- Store leftovers in an airtight container in the fridge for up to 2 days.
Leftovers + Repurposing:
- Shake up leftovers before drinking!
