Chocolate Dipped Peanut Butter Popcorn Balls

I always like to have a peanut butter chocolate treat for Halloween. In the past it’s been my Snicker’s Bars or my peanut butter cups in Run Fast. Cook Fast. Eat Slow, but now these have taken first place! They use ingredients that I always have in my fridge and pantry and they are so easy to make. Crunchy salty popcorn gets mixed in a peanut butter mixture and dipped in dark chocolate with more popcorn sprinkled on top. That salty, sweet, crunchy, nutty, chocolatey combo is to die for!

Servings 18 balls
Prep Time 10 minutes

Ingredients

  • 2 tbsp butter
  • 1 cup natural peanut butter
  • 1-2 tbsp maple syrup
  • ½ tsp kosher salt (only use ¼ tsp if your peanut butter is salt or if your popcorn is salted)
  • 5 cups popcorn, crumbled, divided
  • 1 cup dark chocolate chips or chopped dark chocolate bar
  • Flaky salt, optional
  • Got leftover melted chocolate? ~ Make chocolate popcorn bark! Pour it onto a parchment lined plate and sprinkle popcorn over top. Drizzle with peanut butter, if you’d like, then place in the freezer to chill.

Instructions

  • In a medium microwavable bowl, add the butter and microwave until just melted. Stir in the peanut butter, maple syrup, and salt until smooth. Add 2 heaping cups of the crumbled popcorn and stir to combine.
  • Line a baking sheet or large plate with parchment. Use a small cookie scoop or spoon to scoop and form into rough balls and place on the parchment. Transfer to the freezer for at least 30 minutes to chill and harden.
  • Meanwhile, add the chocolate to a microwavable bowl and microwave in 20 second intervals, stirring after each time, until just melted.
  • Dip the peanut butter popcorn balls into the chocolate on one side, then sprinkle with remaining popcorn crumbles so they stick to the chocolate. Option to sprinkle with flaky salt. Place back onto the parchment and repeat with remaining balls.
  • Transfer back into the freezer for at least 30 minutes to chill. Enjoy right out of the freezer or let it sit out for a few minutes to soften.

Substitutions:

  • Sub any nut or seed butter for peanut butter.

Storage:

  • Store leftovers in an airtight container in the freezer for up to 2 months (ha!)

  • Pop them in your mouth right out of the freezer or let them sit out for a few minutes to soften up.
