Lemon Blueberry Muffin Smoothie

Ingredients

  • 1 ½ cups water
  • 1 cup frozen blueberries
  • ½ cup plain whole milk Greek yogurt
  • ¼ cup rolled oats
  • ¼ cup hulled hemp seeds
  • 2 tbsp chia seeds
  • 1-2 tbsp maple syrup or 3-4 dates
  • Zest from 1 lemon
  • 1 tbsp lemon juice
  • ¼ tsp vanilla extract
  • Note: ~ just FYI when it sits, it really thickens up and gets a little gloppy from the chia seeds. It makes a great smoothie bowl with all the toppings or just stir in some water to thin it out.

Instructions

  • Add all ingredients to a high-speed blender and blend on high until totally smooth.

Notes

Substitutions:

  • To make dairy-free/vegan, substitute yogurt with a vegan alternative or skip it all together and increase hemp seeds to ½ cup. You may need to add a bit more water if you do that.
  • Sub frozen raspberries for blueberries. It would also be yummy with ripe frozen summer peaches.
  • Skip the chia seeds and sub them with more hemp or your favorite nut or seed butter.

Storage:

  • Store leftovers in an airtight container in the fridge for up to 2 days.

Leftovers + Repurposing:

  • When the smoothie sits overnight, it really thickens up and gets a little gloppy from the chia seeds. It makes a great smoothie bowl or just stir in some water to thin it out.
  • Turn it into a smoothie bowl and top with granola, banana, and berries (or whatever your heart desires!).
  • Add it to a bowl and swirl in some Greek yogurt and top with granola.
