½ tsp garlic powder or 1 clove garlic, minced or crushed**
½ tsp black pepper
* Use cabbage, broccoli, bell pepper, kale, mushrooms, coleslaw mix, anything! Just make sure to finely chop it.
** I’m using cumin and garlic, but you could use whatever spices you like! Dried oregano, fennel, red pepper flakes, etc…would all work!
Items you can prep ahead (optional)
Finely chop 1 cup veggies
Make turkey patty mixture, form patties, and bake!
Instructions
Preheat oven to 450F or 425F convection. Line a baking sheet with parchment paper. Drizzle the oil all over and use a brush or your fingers to spread it all around to coat.
In a medium bowl, add the egg and whisk. Add turkey, veggies, cumin, salt, garlic, and pepper. Use your hands to mix to combine thoroughly.
Form the turkey mixture into small mounds (about 1 heaping tablespoon, you should have about 12-15) and place onto the oiled sheet. Roll them around in the oil to coat on both sides (or use a brush), then flatten them slightly with your hands. Bake for 10-12 minutes or until browned on the bottom and cooked through.
